Somehow it's August, which means summer is doing that thing where it sprints toward the finish line while we're all still trying to figure out where June went. But before we let the season get away from us completely, let's talk about something we actually can control: our health foundations. π½οΈ Heatherβs Fall Favorite Recipe
Enchiladas Suizas with Corn and Black Bean Salad
Enchiladas:
1 15-oz can green enchilada sauce, mild or medium to preference
4 oz sour cream or plain Greek yogurt
4 oz cream cheese, softened
4 c shredded chicken (a rotisserie is an excellent shortcut)
1 16 oz block of white cheese, shredded (jack or mozzarella)
1 4-oz can diced green chilies, optional
12-14 corn tortillas
Optional toppings: more sour cream/Greek yogurt, chopped cilantro, diced avocado or guacamole, sliced black olives
Preheat oven to 375.
Pour green sauce, sour cream/yogurt, and cream cheese into a blender and process into a smooth sauce. Stir about half a cup of your new sauce into the shredded chicken and 1 cup shredded cheese in a large bowl. Stir in green chilies if using. Pour another half cup of sauce into a 9x13 baking dish and spread to evenly coat the bottom.
Six at a time, wrap the corn tortillas in a damp paper towel and microwave for 20-30 seconds to soften them for rolling. Keep them covered as you work.
Place some chicken and cheese filling in the middle of each tortilla and roll, trying to keep them uniform as you go. Place seam-side down in the pre-sauced tray and continue until the filling is gone. **If they still split a little as you roll them, it's okay. They're all going to bake together just fine anyway.
Once your tray is full of rolled enchiladas, pour the rest of the blended sauce over top and wiggle them around if needed to spread the sauce between them. Cover with remaining cheese, then cover the dish with non-stick foil.
Bake covered for 20 minutes, and uncovered for 20-25 more, or until the sauce is bubbly and the cheese is starting to brown. **I highly recommend cutting them right after they come out of the oven, before the cheese becomes a solid shell on top, but waiting to serve them until they're cool enough to do so safely.
Dish up with corn and black bean salsa and/or any other desired toppings.

Corn and Bean Salsa:
1 15-oz can jalapeno and lime black beans, drained (plain is fine if you can't find those)
1 c corn (sweet, fire-roasted, freshly grilled, thawed from frozen, canned and drained - anything works)
2 green onions, finely sliced
1/2 shallot, finely diced
1/2 red bell pepper, finely diced
juice of one lime
pinch of salt to taste
chopped cilantro for topping, optional
1 avocado, diced (optional)
Combine all above. Let rest while enchiladas bake and drain any excess liquid from salad before serving.
